Kui tundub et suhkur on veel liiga kuiv, siis lisa natukene veel vedelikku. Nii et suhkur on veidi voolav. Tõsta pott pliidile, keera kuumus 7-8 peale. Kui siirup hakkab keemiseni jõudma, siis keera kuumus madalamaks 4-5 peale ja jäta siirup vaikselt podisema. Vahepeal sega nii et suhkrukristallid poti servast lahti tulevad. Keemine kestab umbes 5-8 minutit, kuni sukrusiirupi temperatuur on 118-120°C. Kui tilgutad siirupit taldrikule ja sinna jääb kuulike mis laiali ei valgu siis on siirup valmis. Siirupit üle keeta ei tohi !</span></b><br />

Eralda munavalged vahustamisnõusse ja vahusta veidikese soolaga tugevaks vahuks. Nüüdseks on ka siirup valmis. Keera vahustaja kiirus aeglasema peale ja nirista siirupit järjest munavalgevahtu niikaua kuni see lõpeb. Keera kiirus täisvõimsuse peale ja jätka vahustamist. Vahusta seni kuni vaht on käesoe, tugev ja hakkab vahustamisnõu servadest lahti lööma. Aega läheb umbes 10 minutit. Vahustamise lõpupoole lisa sidrunihape. </span></b><br />
